“The cheese is from cultured milk that is heated until the curds separate from the whey. Some of the whey is then drained, and water is added. This is called “washing the curd”, and creates a sweeter cheese, as the washing removes some of the lactic acid. About ten percent of the mixture are curds, which are pressed into circular moulds for several hours.” -from wikipedia.
The first thing I noticed about this cheese is its creamy texture. At first bite I could really taste the age of the cheese. A slight bitterness complimented the cheese and provided it with a bold flavor. The after taste was the highlight of this cheese providing a creamy, nutty sensation. You can defiantly tell the quality of the cheese compared to pre-packaged “childrens cheese.” The cheese had a very soft texture and melted in my mouth. The aroma of the cheese had a very mild pleasurable scent that was not too strong. If the overall taste of the cheese was more powerful it would provide a near perfect experience, but this is still none the less great cheese. This is a great cheese for newcomers and experienced eaters, and will surely be enjoyed by all.
